Make the memories count and not the calories. Serve up almond butter canapés made with Vital Corn Cakes and drizzle them with honey for that perfect touch of sweetness.
- 400 g raw almonds
- 1 tsp ground cinnamon
- ½ tsp vanilla seeds or paste
- Pinch of sea salt
- Fresh apples, sliced

Preheat oven to 180˚C.
Place almonds on a baking tray and roast in the oven for 10 minutes.
Remove and pour into a food processor. Blitz for about 10 minutes. It will first become a wet sand like texture and then without any addition of oil it will become creamy and smooth.
Once smooth add the cinnamon, vanilla and a pinch of salt.
Scrape into a jar and cool slightly in the fridge.
Spread the almond nut butter onto the corn cakes. Top with some fresh apples and a drizzle of honey.
