Avo Hummus Rice Cakes


1 tin chickpeas, drained

2 avocados, ripe

½ tsp cumin

¼ cup olive oil

Pinch of salt

3 Tbsp lemon juice

1 clove garlic, peeled

2 Tbsp tahini

To serve:

Vital Original Rice Cakes

Fresh Coriander

Chilli flakes


Add all the ingredients to a food processor or blender. Blend until smooth. You can add a drop of cold water to thin out the consistency if desired.

Spread avocado hummus onto Vital Rice Cakes and top with a few chilli flakes and fresh coriander.
