Berries & Cream Cakes Topping

All of the goodness! None of the guilt…
Serve up these berry and cream delights while your guests relax.


  • 250 g tub smooth cottage cheese
  • 1 tsp vanilla
  • 2 Tbsp honey
  • 1 ½ cups fresh raspberries
  • 1 Tbsp honey
  • 1 ½ cups fresh raspberries
  • Vital Multigrain Cakes


In a small saucepan combine the raspberries, ¼ cup water and 1 Tbsp honey. Cook down and crush the raspberries until smooth. Allow the water to evaporate and the coulis to thicken. Place in the fridge to cool and thicken up.

In a medium sized bowl combine the cottage cheese, honey and vanilla. Mix until smooth.

Spread creamy vanilla mix onto the cakes. Top with strawberry slices and a dollop of coulis.
