Rice Cake Energy Bars

Beat the midday slump with these high protein energy bars. Packed with nutritious ingredients and Vital Rice Cakes, they’re expertly formulated to get you over the finish line.

Ingredients:

  • 1 cup medjool dates, pitted
  • ¼ cup Vital Molasses
  • 2 Tbsp almond nut butter
  • 1 ½ cups Vital Rice Cakes, crushed
  • ⅓ cup almonds, roughly chopped
  • ⅔ cup mixed seeds
  • ⅓ cup dried cranberries
  • ⅓ cup goji berries

Method:

Add dates, molasses and nut butter to a food processor. Process until everything forms a paste.

Scrape the date paste into a large mixing bowl. To the bowl add the crushed rice cakes, almonds, seeds, cranberries and goji berries. Mix well until everything is evenly combined.

Line a 20 x 20cm baking tin with baking paper that overhangs for easy removal. Scrape the mixture into the tin and press down firmly to flatten. Make sure to press it into the corners and compress the mixture.

Place in the freezer for at least 2 hours until very firm.

Remove the mixture from the tin and place on a cutting board. Slice into bars. Wrap then individually in a piece of baking or wax paper to prevent them sticking to each other.

Store them in a tupperware in the fridge.
