Superfruit Muesli & Yoghurt Tartlets

Vital Superfruit Muesli is made with toasted rolled oats, almonds and cashew nuts, pumpkin and sunflower seeds, cranberries, goji berries and blackcurrants. Ideal for making breakfast yoghurt tartlets, with your favourite fresh fruit toppings.

Ingredients:

  • 2 ripe bananas
  • 70 g honey
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 250 g Vital Superfruit muesli
  • 600 g greek yoghurt
  • Fresh seasonal fruit
  • Extra honey for drizzling

Method:

Preheat oven to 180˚C. Grease a 6 cup muffin tin.

Peel and mash bananas in a large bowl. Add honey, vanilla, cinnamon and mix.

Pour in the muesli and mix well.

Spoon the mixture into the muffin tin. Squash the mixture up along the sides and base of each muffin cup creating a tart shell.

Bake for 20 minutes until golden brown and crisp.

Remove from the pan and allow to cool completely.

Fill the tart shells with yoghurt and top with seasonal fruit. Drizzle each tartlet with some honey and serve.
