Vegan Stir Fry on Krummelpap

Vital – Vegan Stir Fry on Krummelpap

Serves 4-6

Ingredients:

Krummelpap:

625ml water

1 Β½ tsp salt 

480g maize meal

Stir fry:

1 red onion, sliced into petals

100g white cabbage, sliced

100g carrot, julienned

100g broccoli, florets or tenderstem 

100g butternut, spiralized 

100g spinach or Swiss chard, roughly chopped 

100g baby corn, sliced in half

100g baby marrows, spiralized

100g mixed bell pepper, sliced

60ml Vital Stir Fry Sauce, plus more to taste 

Fresh coriander, for serving

Olive oil, for frying

Method: 

For the krummelpap:

Bring the water to a simmer and add the salt. 

Scatter in the maize meal and cover with a lid. Reduce heat to low. 

Allow to steam for 10 minutes. 

Remove the lid and using the handle of a wooden spoon break up the pap, fluffing it into a very crumbly texture. (You can use a fork for this too but be careful of scratches if you like the pot you are using) 

Return the lid to the pot and steam again for another 20 minutes on low heat. 

Remove the lid and fluff up once more until very crumbly. 

Taste to adjust seasoning. 

Cover with the lid and keep warm until serving. 

For the stir fry:

Heat a drizzle of olive oil in a large wok or deep frying pan on high heat. 

Add the red onion, cabbage, carrot, broccoli and butternut. 

Cook until almost tender. 

Next add the spinach, baby corn, baby marrow and mixed peppers. 

Mix well. 

Pour in the Vital Stir Fry Sauce. Stir to coat all the vegetables until well glazed. Add more if desired. Cook until the vegetables are just cooked through and retain a good amount of crunch and bite. Taste to adjust seasoning.Β 

Scoop a generous amount of krummelpap into a bowl and spoon over the saucy stir fry vegetables. 

Scatter with coriander, drizzle with a little extra Vital Stir Fry Sauce and serve!
