Cooked chia seeds with coconut milk and smooth granadilla yoghurt, garnished with fresh granadilla pulp, mint and gooseberries.

Ingredients

80 ml (1/3 cup) chia seeds
500 ml (2 cups) coconut milk
15 ml (1 Tbsp) honey
10 ml (2 tsp) vanilla paste
250 ml (1 cup) Vital Medium Fat Smooth Granadilla Yoghurt
80 ml (1/3 cup) granadilla pulp
Fresh gooseberries, to garnish
Fresh mint, to garnish
Coconut flakes, toasted, to garnish
Method
Place the chia seeds, coconut milk and honey in a small saucepan and heat for about 5 minutes on a medium heat while stirring. You can skip the heating step, but then the chia seeds will take longer to absorb all the liquid. Stir well to avoid any lumps from forming. Set aside and allow to cool.
Once cooled, add the vanilla paste and yoghurt to the chia mixture and mix well. Add 60 ml (1/4 cup) of the granadilla pulp and mix well. Place the chia mixture in glass jars and place in the fridge to set for an hour or two.
Garnish the chia pods with the remainder of the granadilla pulp, fresh gooseberries, fresh mint and toasted coconut flakes.
