Makes 1 loaf
350ml rooibos tea (at 43˚C)
2 Tbsp Vital Molasses
10g instant dry yeast
450g brown bread flour
1.5 tsp salt
1 cup / 140g Vital Original Swiss Style Muesli (plus an extra handful for topping)
Top tip: You can use any of the 3 Vital Muesli flavours to change up your health loaf!
Combine rooibos tea and molasses. Mix. Sprinkle over the yeast, flour, salt and finally muesli.
Mix to combine everything and then knead well.
This whole process can be easily done by hand or by stand mixer.
Proof in a greased bowl for one hour or until doubled in size.
Scrape bread mixture out of bowl. Shape and place into a loaf tin.
Top with a scattering of muesli.
Allow to rise again for another 30 minutes.
While on the second rise- preheat oven to 200˚C.
Bake loaf for 40 minutes or until cooked through and a knock on the bottom sounds hollow.
Allow loaf to cool slightly and then remove from tin and place on a cooling rack.
Allow loaf to cool completely before slicing. This will ensure the loaf is not dense.
Serve as is or toasted with some butter or your favourite toast topping.
