Makes ± 9-12 scones
300g / 2 cups flour, plus more for dusting
½ tsp salt
1 Tbsp baking powder
2 Tbsp sugar
75g cold butter, grated
140g / 1 cup Vital Original Muesli
1 large egg
180ml cream, plus more for brushing
Preheat oven to 220˚C. Grease / line 2 baking trays.
Whisk flour, salt, baking powder and sugar together to mix.
Add the butter and work together with your hands until the mixture resembles wet sand.
Mix in the Vital Original Muesli.
Lightly beat the egg with the cream.
Pour mixture into the rest of the ingredients and bring together to form a sticky dough.
Turn the dough out onto a lightly floured surface and knead very gently just to bring it together into a 2-3cm thick disc. Use a ± 6cm scone cutter or a glass to cut out rounds.
Place the scones on the prepared baking trays.
Brush the top of each scone with a little bit of cream.
Bake for ± 15 minutes, or until the scones are beautifully golden brown.
Serve with softly whipped cream and jam or butter and grated cheese.
