Overnight Soy Marinade

More flavour, less sodium! Made with a generous squeeze of Vital’s 25% Less Salt Soy Sauce, these quick and easy air-fried chicken sosaties are big on taste and make the perfect addition to your spring menu.

Prep time: 20 minutes

Marinating time: 1 hour or overnight

Cooking time: 15 minutes

Total time: 35 minutes plus marinating time

Serves 4

Ingredients

For the Marinade:

250 ml (1 cup) Vital 25% Less Salt Soy Sauce

30 ml (2 Tbsp) water

60 ml (1/4 cup) blended seed and extra virgin olive oil

3-4 garlic cloves, finely sliced

3-4 cm fresh ginger, peeled and finely sliced

1 small red or green chilli* optional

1 sprig of rosemary

For the Chicken Sosaties:

12 skinless and boneless chicken thighs

Salt and black pepper, to taste

4-8 wooden sosatie sticks

Method

For the Marinade:

Combine all the ingredients in a bowl and mix well. Put aside until needed.

For the Chicken Sosaties:

Cut the chicken thighs in half and skewer into the wooden sosatie sticks and place them in a shallow dish. Pour the marinade over the sosaties, cover and place in the fridge to marinade. 

Once marinated remove the sosaties from the marinade, pour the marinade into a pan on a medium heat and reduce the marinade to make a dipping sauce. Optional* Add about 80 ml (1/3 cup) honey to sweeten.

Cook the chicken sosaties in a 200°C air fryer for 10-12 minutes. Baste with the reduced marinade and serve the soy chicken sosaties with a fresh side salad and soy dipping sauce.
